  1. Preparation of the Compound: Mix the mixture with a quantity of Foam Mix ranging from 10 to 50 g/L, depending on the initial consistency (liquid or creamy).
  2. Using the Siphon: Insert the mixture into the siphon and load it with nitrogen (1-2 charges, depending on the type of siphon).
  3. Rest in the refrigerator: Let it rest in the refrigerator for at least 60 minutes.
  4. Service: Serve cold or heat in water to a maximum temperature of 65°C.

Desired consistency: The desired consistency before placing the mixture in the siphon is similar to that of a topping. Correction of the Quantity Used: If there is a surplus in the amount used, simply add more liquid to restore the previous state.
