Features of Spuma Mix:

Natural Origin: Spuma Mix is an all-natural foaming agent, made from waxy corn starch and super-whipping albumins. Main Function: Used with the siphon, it transforms liquids, creams and purees into soft foams that can be served both cold and hot (maximum 65°C). Use as an Mounting Agent: Used alone, its function is that of a mounting agent.

How to Use Spuma Mix:

  1. Preparation of the Compound: Mix the mixture with a quantity of Foam Mix ranging from 10 to 50 g/L, depending on the initial consistency (liquid or creamy).
  2. Using the Siphon: Insert the mixture into the siphon and load it with nitrogen (1-2 charges, depending on the type of siphon).
  3. Rest in the refrigerator: Let it rest in the refrigerator for at least 60 minutes.
  4. Service: Serve cold or heat in water to a maximum temperature of 65°C.

Desired consistency: The desired consistency before placing the mixture in the siphon is similar to that of a topping. Correction of the Quantity Used: If there is a surplus in the amount used, simply add more liquid to restore the previous state. With Spuma Mix, you can transform your preparations into fluffy foams, ensuring a unique presentation and perfect texture.
