Sodium alginate is a fibrous carbohydrate obtained from brown algae, in particular from Macrocrystis, Fucus, Laminaria etc. and are found in the cold seas. Basically it is a gelling agent (in the presence of calcium), but it also has properties and thickeners. It does not disperse well in acid medium and the gels produced in calcium medium are thermostable and, therefore, do not turn into liquids as the temperature increases.
