Fibrous carbohydrate extracted from the red marine algae Gelidium and Gracilaria with gelling, thickening and stabilising properties. Its gelling is fast, and once gelled it can withstand temperatures up to 80°C, which allows it to be gelled hot, obtaining an optimal result even with very small quantities. It is thermoreversible, so once gelled, if it melts it can reify. In an acidic and alcoholic environment it loses part of its gelling capacity and therefore the dose must be increased to obtain the desired consistency.
